I was lucky enough to spend the morning inside the Ghirardi Onesto production facility in Langhiarano as a guest of the Consorzio del prosciutto di Parma where, along with Elissa Altman and Rowan Jacobsen, we watched Paolo, the production manager, show us everything from salting the hams to showering (the hams) to testing with a horse bone. Such a good shot! (They look a tad of scary, though.)
Next time I eat prosciutto, I’ll think of this image, and the fact that it has showered.
I wish I would have taken that pic! I’m taking a photography class this semester. It’s a lot of fun…get to develop and do the printing process…black and white photos very cool.
